Dum Aloo

Dum Aloo 

If it is potatoes the list goes endless, and if its baby potatoes all the more ,then i can't just wait to cook them .Dum aloo is a all time Indian favourite,It is a spicy gravy based potato preparation that goes well with puris parathas or rice.

 


Ingredients
  • boiled and peeled baby potatoes-750 grams
  • onion-2 medium,(finely chopped)
  • ginger garlic paste-1 tablespoon
  • tomato puree(of two to three medium sized tomato)
  • coriander powder-2 teaspoon
  • cumin powder 1 teaspoon
  • chili powder -1 teaspoon
  • garam masala-1 teaspoon
  • bay leaves-2
  • cumin seeds -1 teaspoon
  • salt -as per taste
  • turmeric powder -1 teaspoon
  • wheat flour -1 teaspoon
  • sugar-1 teaspoon
  • coriander leaves-for garnish
  • oil 



Peel the boiled potatoes and add salt and turmeric powder


deep fry the potatoes till they change colour

After frying they look like this

take all your ingredients

add the cumin and the bay leaves in the same pan in which you fried the potatoes

once the cumin splutters add in the onions ,ginger garlic paste ,the salt and the turmeric

saute in low heat for sometime till the raw smell of onion and garlic is gone




time for the tomato puree

  
add in the cumin ,coriander and chili powder and saute in low flame till oil oozes out



this is how it looks like



put in the fried potatoes
mix well and roast in high flame for 2 mins

in goes the  wheat flour,sugar ,garam masala and coriander leaves

add in water as per desired consistency of gravy and simmer in low flame for sometime
ready to serve.
