Hi folks,I am back once again with a nutritious lunch box idea.Today I am not sharing the regular paneer bhurji that you get at the restaurants.this one is loaded with vegetables,which add to the flavour ,texture nutrition and also some added crunch to the rolls.This recipe requires very little spices,and little oil.It can get prepared in a jiffy.I would still suggest that if you have to pack lunch boxes too early ,then you can actually make the bhurji the previous day ,and use it to fill in the chapati the next morning.
Ingredients
- Paneer-200 gms
- onion-1-cut in thin slices
- red capsicum-half,(cut in small pieces)
- yellow capsicum-half(cut in small pieces)
- carrot-one(grated)
- green chillies-2-(cut in small pieces)
- coriander leaves
- Kasuri methi powder-half teaspoon
- turmeric powder-half teaspoon
- salt -as per taste
- sugar-half teaspoon
- oil-one tablespoon
- tomato ketchup

Fry the onions,capsicums and carrots with some salt and turmeric. |

Cover and cook for 2 minutes |

They should look like this,the raw smell of the onions should be gone |

Time to add the paneer,and mix well with the veggies |

Time to add the coriander leaves ,kasuri methi powder and sugar,mix well before switching off the flame |

Apart from chapati rolls,this preparation goes very well with Parathas.
Important tip-The red and yellow capsicums can be substituted with green ones
