Chinese Fried Rice
I am sharing with you my favourite rice recipe today.I love it for many reasons,I simply love the flavour,then it is prepared in very little rice.It can also be prepared with left over rice.It can be packed in kids lunch boxes without any accompaniments. What else,yes,I can always convert it into the egg variation ,the prawn variation or the chicken fried rice.

Ingredients
3 cups cooked rice
The veggies
- carrots( cut in very small pieces)-half cup
- .capsicum( cut in very small pieces)-half cup
- shallots ( cut in very small pieces)-half cup
- beans( cut in very small pieces)-half cup
- ginger mince-2 teaspoon
- garlic mince-1 tablespoon
- green chilis 2 to 3
- spring onions for garnish
green chili sauce-2 teaspoon
vinegar-half teaspoon
salt as per taste
sugar-1 teaspoon
pepper powder-1 teaspoon
Tips- 1.To get best results make in small batches,
2.The rice should be cooled down before starting to make the fried rice.
The veggies |
Steam the carrot and the beans for 5 to 7 mins |
Mix the steamed carrots and beans with the capsicums and onions |
Cook the rice and leave it in a plate to cool |
The sauces and vinegar |
mix the chili sauce ,soy sauce and vinegar and keep ready |
saute the veggies with the sauce mix |
Now add the minced ginger and garlic,and salt |
Stir on high heat |
Add the rice |
stir with sugar and pepper and spread out ,leave like this for 2 mins |
garnish with spring onions |
Ready to serve |
2.The rice should be cooled down before starting to make the fried rice.
