Lemon Rice Recipe (South Indian Lunch Box Menu) || Flavoured Rice with a tempering of spices

Today I am going to share a very common south Indian breakfast recipe .This recipe is also known as chitranna at places in southern India.I am particularly fond of this recipe because it tastes equally good when not warm .So it is the perfect menu to pack in the lunch boxes .
It is also  are a recipe which can be made with very few ingredients and is great when a big quantity is to be prepared .

 Ingredients
Cooked rice -2 cups(you can take the sonamasuri variety)
Green chillies-3 to 4 -slit lenthwise
Roasted chanadal-1 tablespoon
Peanuts- one tablespoon
Urad dal-1 teaspoon(Optional)
Salt -as per taste
 Mustard seeds-1 teaspoon
Tumeric-1 teaspoon
Curry leaves-handful
Oil-1 tablespoon
1 lemon cut in wedges

Procedure

Follow the sequence correctly for best results
1-Heat 1 tablespoon oil in a wok
2-Add the peanuts when the oil is hot ,and stir for 30 seconds
3-Add the Roasted chana dal next ,and stir for 30 seconds
4-Add the chillies and stir for 30 seconds(If you wish to add the urad dal add here)
5-Then add the curry leaves and stir for thirty seconds
6- Add the mustard and let it splutter
7-Add the tumeric
8-next add the cooked rice
9-Sprinkle the salt over the rice
10- and squeeze the lemon juice after switching off the flame
11-Serve hot

Ingredients

Add the ingredients to the oil in the correct sequence as mentioned

Add in the rice

Stir well and mix

Squeeze in the lemon and mix once again after switching off the flame


                                              


Serve Hot
