Cabbage or bandhakopi (The Bengali way) Recipe


Badhakopi Or Cabbage the Bengali way

The cabbage is one of those veggies which can be cooked very fast,I always see to it that I have a cabbage or at least a portion of it in my fridge.A slice of cabbage can be your saving grace in many situations.Be it a quick Maggie or chowmein,,it is an option for many preparations.
Today I am sharing The Bengali style cabbage ,this is a no onion garlic recipe
,very common as an accompaniment with the Bengali khichuri served as bhog in festivals.













Ingredients
Cabbage -about 500 gms (shredded in thin long strips)
Potatoes (cut in cubes)
Tomato -1 medium(cut in cubes)
Bay leaves-2
Cumin seeds -1 teaspoon
Salt -as per taste
Tumeric-half teaspoon
Sugar -1 teaspoon
Green chillies-2 -slit lenghwise
Wheat flour-1 teaspoon
Ghee-1 teaspoon



Method
1-The cabbage has to be shredded in fine strips for the desired taste
2-Heat oil in a pan 
3-Add in the bay leaves and the cumin and let the cumin splutter
4-Add the  Potatoes to the oil next
5-add the salt  and stir
6- Stir for about 2 minutes 
7-Now add the shredded cabbage
8-Place the tomatoes ,and the chilies with the tumeric on the cabbage(if you wish to add green peas you can place  a handful here)
9-Cover and cook in low to medium heat for 10 minutes
10-Stir well in medium heat till the cabbage wilts completely(it should also reduce in quantity)
11-Add in the garam masala
12 then the sugar and the wheat flour
13- then the ghee 
14-Stir well for another two minutes before switching off the flame
15-Serve with hot steamed rice or chapati





Ingredients

Add in the potatoes




In goes the salt




After two minutes ,the cabbage

Chilies,tumeric and tomatoes




Cover and cook in low to medium flame for 10 minutes


Open the lid
Stir well till the cabbage wilts completely and the mixture reduces in quantity

Time to add garam masala




Add the wheat flour and the sugar

Add the ghee and stir well

Switch off the flame and serve with hot steamed rice or chapati
